This is a super easy snack that I make when I am crunched for time, but want a little something more than a granola bar! These spicy coconut shrimp are good by themselves or topping a salad, bed of grains (pictured below), or with pasta for a heavier dish.
Start by simmering shrimp over medium heat in a pan with a thin layer of coconut oil.
While cooking, season shrimp with Cajun seasoning and garlic salt.
Remove from pan, let cool, and enjoy!
