In the next week ahead we are going to be moving (yes, again), which means it’s going to be a hectic week filled with last minute packing, planning, and rushed meals. I have been craving cookies, but also trying to eat healthy, so I compromised by tweaking the recipe a bit. Since it is going to be a stressful week of adult stuff, I figured I may as well take advantage of being an adult and have cookies for breakfast! I used this recipe, but substituted the enriched flour for wheat flour, the white sugar for organic cain sugar, and used coconut oil in place of half of the amount of butter the recipe called for. Instead of chocolate chips, I crushed up 85% dark chocolate bars. I also added a bit of protein by using my cookie scoop to press the top of the cookie into a bowl, and filled it with a dollop of peanut butter.
